Mindful Bite Recipe: Cottage Cheese Breakfast Bowl

I promise there is cottage cheese underneath all that goodness!

Simple, delicious and quick! This cottage cheese bowl packs a powerhouse of protein from the cottage cheese and added nuts/seeds. I eat this for breakfast (and sometimes lunch). Pair this with a slice of toast (avocado optional) and feast away. Think of it as a parfait made with cottage cheese. Feel free to customize to your liking.

  • 1 cup of whole milk cottage cheese (I like the Daisy brand for this)

  • 1 cup cut up fresh fruit - I use a combination of strawberries, blueberries, blackberries, bananas

  • 1/2 cup of your favorite toppings - I use a combination of nuts (walnuts, pecans, cashews, almonds), seeds (sunflower seeds, chia seeds and/or hemp seeds), raisins (or other dried fruit), or homemade granola.

  • (Optional) about 1 tablespoon of honey to drizzle on top

Layer your ingredients starting with cottage cheese on the bottom, then the fruit and then the toppings. Drizzle the honey on last.
